Fresh Swedish Cucumber Salad

The cucumber is included in many Swedish meals. The most common kind in Sweden is what is generally called the English cucumber here. It is fairly long and skinny. The skin is thin and the seeds are small. We put it on our sandwiches, in wraps, on the traditional Swedish ‘sandwich cake” and many other dishes.

Cucumber is very refreshing and comes with an array of health benefits. They consist of approximately 96 percent water. They will help keep you hydrated!

Cucumber can relieve heartburn and can even relieve sunburns by placing them on your skin!

Placing cooled cucumber slices on your eyes will reduce puffiness and under-eye bags.

They also supply skin-friendly minerals such as magnesium, potassium, and silica. Silica makes your hair and nails stronger.

Cucumbers contain vitamins A, B, and C which boost your immunity!When you need a healthy snack, eat a cucumber!

Here is a recipe for a lovely Swedish cucumber salad often served as a side with meatballs and potatoes. It is very easy to make and bursts with flavor, You will only need a few simple ingredients.

INGREDIENTS

1 English cucumber, thinly sliced

1 tbsp dill

1 tsp chives

4 tbsp white distilled vinegar

2 tbsp water

1 tsp salt

3 tbsp sugar

1 tbsp finely chopped onion

1 tsp rough ground black pepper

Thinly slice the cucumbers and layer them in a medium sized bowl. Mix the rest of the ingredients in a small bowl. If you do not have fresh dill and chives, dried works fine as well. Pour over cucumber and cover with plastic wrap. Place something heavy in the bowl to press the juice out of the cucumbers. Let stand “under press” for at least thirty minutes in room temperature. Place in fridge to chill before serving. Enjoy!
