Fresh Swedish Cucumber Salad

The cucumber is included in many Swedish meals. The most common kind in Sweden is what is generally called the English cucumber here. It is fairly long and skinny. The skin is thin and the seeds are small. We put it on our sandwiches, in wraps, on the traditional Swedish ‘sandwich cake” and many other dishes.Cucumber is very refreshing and comes with an array of health benefits. It is very easy to make and bursts with flavor, You will only need an few simple ingredients. INGREDIENTS1 English cucumber, thinly sliced1 tbsp dill1 tsp chives4 tbsp white distilled vinegar2 tbsp water1 tsp salt3 tbsp sugar1 tbsp finely chopped onion1 tsp rough ground black pepperThinly slice the cucumbers and layer them in a medium sized bowl. Mix the rest of the ingredients in a small bowl. If you do not have fresh dill and chives, dried works fine as well. Pour over cucumber and cover with plastic wrap. Place something heavy in the bowl to press the juice out of the cucumbers. Let stand “under press” for at least thirty minutes in room temperature. Place in fridge to chill before serving. Enjoy!
