The cucumber is included in many Swedish meals. The most common kind in Sweden is what is generally called the English cucumber here. It is fairly long and skinny. Here is a recipe for a lovely Swedish cucumber salad often served as a side with meatballs and potatoes. It is very easy to make and bursts with flavor, You will only need a few simple ingredients.
1 English cucumber, thinly sliced
1 tbsp dill
1 tsp chives
4 tbsp white distilled vinegar
2 tbsp water
1 tsp salt
3 tbsp sugar
1 tbsp finely chopped onion
1 tsp rough ground black pepper
Thinly slice the cucumbers and layer them in a medium sized bowl. Mix the rest of the ingredients in a small bowl. If you do not have fresh dill and chives, dried works fine as well. Pour over cucumber and cover with plastic wrap. Place something heavy in the bowl to press the juice out of the cucumbers. Let stand “under press” for at least thirty minutes in room temperature. Place in fridge to chill before serving. Enjoy!
